In China pancreatin is used mainly in medical industry but rarely in food industry.In the «Regulations on Food Purpose Chemical»(FCC-4th edition)(USA),new rules have been made on all kinds of existing enzyme products used for food processing.The following is translated from the Regulations abuot pancreatin: Pancreatin,a white or light yellow amorphous powder extracted from the pancreas of pig and cow,is soluble in water, but now soluble in glycol,chloroform,or ehter.It is used for the preparation of protease and tendering meat.Its optimum PH and temperature are 8-9 and 45°C respectively.Its consumption is restricted by GMP,there's not any restiction on ADI.
Pancreatin is specifically used to hydrolyze the peptide chain formed by the arginie and the hydroxyl group of basic amino-acid.Therefore, to hydrolyze protein sources with pancreatin is more thorough and complete.Not only its post treatment is simple and free from pollution,but also it is cheap,fast and easy.It makes the products better tasted.Moreover,the molecular weight of the peptide chain may be controlled by adjusting the addition of pancreatin and the reaction time.Hence it is ideal intermediate of hydrolyzing protein source.
Usage: Bstance to be hydrolyze,the optimum PH and temperature of 8-9 and 45°C,and concentration of 1:200(200 active pancreatin: substance to be hydrolyzed)and the hydrolysis duration of 2-4hours.The PH,temperature and concentration may be adjusted according to the properties of the substance to be hydrolyzed and the requirements on the product.
